Awesome Green Salad


You can make this with the bitterest greens – dandelion leaves, for example, and still find yourself eating a big plateful!


3-4 big handfuls of dark green leaves – bitter is fine

½ cup flax seed oil

½ cup cold pressed virgin olive oil

2 tablespoons white miso

1 cup freshly squeezed orange juice


Blend everything except the green leaves together in the blender until it forms a creamy orange dressing. Use as much as is needed to make your raw dark green salad delicious. Eat immediately or marinate the greens for an hour or so in the dressing to soften them.





Eat Your Greens!

Simple Savoury Greens


A simple way to love leafy greens is to dissolve a good quality stock cube in an inch of water, bring to a boil, then add a large bunch of greens, roughly chopped. Simmer for a few seconds/a minute until the leaves are wilted and soft, stirring once or twice. Your greens will be deliciously juicy and savoury and you will surprise yourself at how much you will eat.


Sprinkle them with sesame seeds, fresh chopped herbs, add a dash of cayenne or a tablespoon or two of coconut oil – let your imagination run wild, and no simple dish of greens will ever be the same!


Marinated Kale Salad


4 cups torn or shredded kale

1 cup grated carrot

1 cup julienne cut cucumbers

1 cup sliced mushrooms


1 tablespoon dark miso or natto miso

2 tablespoons rice vinegar

½ tablespoon sesame oil

½ cup fresh orange juice

1 small fresh mild green chilli or jalapeno

Sea salt to taste




Green Salad With Spiced Avocado Dressing


1 head lettuce (not iceberg, it’s not green!)

Handful edible weeds such a dandelion leaves, chickweed, purslane etc

Handful or two fresh parsley, chopped

Handful lemon balm leaves, chopped or whole

Handful or two of rocket leaves

Optional - 1-2 medjool dates, chopped


Spiced Avocado Dressing


1 large avocado

2-3 tablespoon fresh lemon juice

1 cup water or celery juice

1 tsp sea salt or white miso

1 tsp ground black pepper

A couple of slices of a fresh chilli, or a pinch of cayenne pepper, or a jalapeno chilli.

Blend everything together in your blender until smooth and creamy. Pour over your green salad and treat yourself!

TO MAKE THE MARINADE


Blend all the ingredients in a blender until smooth


TO MAKE THE SALAD


Place all the prepared vegetables in a large bowl. Pour the marinade over and toss well.


Sprinkle the salad with sesame seeds, walnuts, torn nori sheets and some chopped chives.
